Have you ever been curious as to what oil tastes like? Maybe canola, vegetable, or even olive oil?
I have! And I have tasted them!
Pretty gross.
So coconut oil, I didn't have high expectations for. I am not sure what I expected, but I sure wasn't expecting what I tasted. I put my finger in it, and tasted it- totally expecting to be 100% grossed out. But it had the best flavor of any oil I have personally tasted! I thought it was delicious. It did in fact taste like coconuts though.
I supposed we associate coconuts as being sweet, because of the sweetened flakes we so often buy. They have little to zero nutritional content when you buy them that way. But otherwise, coconuts are extremely beneficial to your body. Coconut water is actually not sweet. And many people who do not like coconuts think that it is because of the texture, but in fact when you cut open a coconut, the flesh of it, is not like what we buy in stores at all. Its smooth and slippery.
  It doesn't fry well but it does cook well.
Something about using it to deep fry makes the oil change, but the food (I fried a fish finger in it..) still tasted really good. A fish finger fried in coconut oil sounds kinda gross, but it was better than it normally is! I liked it! So ... I decided to bake a cake with it. Not too long ago, I saw an amazing recipe for a rainbow cake, so I went to the store. Got me a fresh coconut, and said, hey Byrd, lets make a coconut rainbow cake. I saw it on a blog. The woman used Diet Sprite in hers, but I decided coconut water would be best. In place of the oil I would need for the cake mix, I used the coconut oil. Tweaked the recipe to my liking, and dove in head first!
It didn't turn out pretty. I'm no baker, you know! I do enjoy cooking, but dinner is my forte- not desserts. The cake tastes amazing, just looked kinda weird. But it was super pretty when it was baking. I wish I had taken her advice however and used gel food coloring, for a brighter cake. The pretty cake, in the picture above, is from someone elses rainbow cake. But this is a great recipe and glad I found it. I am sure that the more and more I make it, the better at making it I will be!
The oil is very clear and smells amazing. I was tempted to use it as lotion, or tanning. :)
The oil is also thinner than vegetable oil. My cake was so moist!

The only things I changed in her recipe, were:

  • Instead of milk/water/sprite.. I used the fresh coconut juices.
  • I also created my own cake batter with eggs, and the whole wheat pastry flour.
  • And just for something different, I used a half a cup of milk- and a half a box of vanilla pudding!
For the icing - I (half) made my own with butter, powdered organic sugar and one container of confetti rainbow chip icing!

Here's my messy experiment here, in pictures. I figured that's much better than words, right?
















Ok, ok, my purple didn't turn out so hot.
After I heated the icing and drizzled it on, assuming that would be pretty- which just made it worse in appearance. But it sure tasted delicious.
