Today I bring to you a review, recipe, and giveaway sponsored generously by Tropical Traditions! As my regular readers have probably noticed I am a coconut fanatic. Do not get me started on its health benefits!

We use our  Coconut Cream Concentrate to make homemade pancakes! Here's the recipe:

Ingredients

• 1 1/2 cups all-purpose flour
• 3 1/2 teaspoons baking powder
• 1 teaspoon salt
• 1 tablespoon white sugar
• 1 cup melted Coconut Cream Concentrate
• 1 egg
• 3 tablespoons butter

Directions

1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the  melted Coconut Cream Concentrate, egg and butter; mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

3. You know the pancake is ready to flip when it has bubbles all over it, and you only need to flip it once and cook both sides, each pancake takes about 3-4 min. Be careful not to cook on too high or too low heat!

The pancakes taste amazing very coconut-y, so if you like coconut, you should definitely try it in the recipe above!

Coconut Cream Concentrate is certified organic whole coconut meat in concentrated form. It contains no additives* (not even water). The dried coconut meat is ground very finely, giving it a creamy consistency due to its high fat content. Since it is 70% fat, it is a rich source of pure coconut oil. 

How is Coconut Cream ConcentrateTM used?

You  can mix 1 or 2 teaspoons of Coconut Cream Concentrate with water or juice to make a creamy coconut drink. Many people put it in their coffee as a non-dairy creamer.
